Fly Rod Cellars is an occasional project of Assistant Winemaker Troy Mandeville and Cellarmaster John Richardson. Each vintage features a different red and rose' wines.  Our Reserve Salmonfly Syrah is 100% Red Mountain Syrah from famed Ciel du Cheval Vineyard.  Aged in 33% new French oak, this Syrah is dense, smoky and full of black fruit and herbs.

Wine Profile
Tasting Notes
This Syrah is produced from the Tablas Creek clone and features a semi opaque ruby-crimson color and intoxicating aromas of wild fruits - blackberries, mountain blueberries, brambly black currants - with scents of crushed roses, mulberry, pipe tobacco, juniper berries, violets and, and spiced incense. The flavors are true to variety and direct, with layers of black and blue fruits that are infused with licorice, dark cocoa, roasted coffee beans and Red Mountain scorched earth. The saturation continues on the back with macerated berries, roasted walnuts, crème de cassis, kidskin, moderate oak and charcoal, followed by a warm yet balanced moderate tannin finish.

19/20 points: Review of Washington Wines
Production Notes
Our grapes were hand sorted and mechanically destemmed into a small bin for a 1-2 day cold soak to bring out flavors and color. Yeast and nutrients were added to start a 7-10 day fermentation. When fermentation was complete, the “free run” wine was pumped into barrels and the remaining skins were gently pressed to extract remaining wine into the barrels. The wine then went through a malolactic fermentation which softens the wine.
Food Pairing Notes
Pairs well with roasted or grilled meats and lasagna.
